My mother-in-law recently sent us home with leftover kalbi (a Korean beef dish). It was boneless (which, in my experience, is somewhat unusual for kalbi),and boy was it delicious! I decided to make an Asian style spinach dish to go along with the tender and flavorful meat. I pretty much just gathered some ingredients and threw them together. It turned out pretty good though (if I do say so myself!). It was super quick to make too. In fact, it cooked faster than the beef did!
Start by heating a large skillet over medium-high heat…
- Add a couple of tablespoons of vegetable oil.
- Chop up a few cloves of garlic.
- Once the oil is hot, add the garlic and some crushed red pepper flake.
- Cook, stirring occasionally, until golden (about 2 minutes).
- Add a bag of spinach.
- Toss to coat the spinach in the oil.
- Add a few splashes of rice wine vinegar.
- Pour in a little soy sauce.
- Stir and let cook until the spinach wilts, about 4 minutes.
- Sprinkle in some sesame seeds.
- Remove from the heat and add a little sesame oil.
- Toss to combine.

Sesame Soy Spinach (serves 2)
INGREDIENTS:
- 2 tablespoons vegetable oil
- 4 cloves garlic, chopped
- ½ teaspoon crushed red pepper flake
- 1 bag spinach
- 2 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 2 tablespoons sesame seeds
- 2 teaspoons sesame seed oil
DIRECTIONS:
- Heat a large skillet over medium-high heat.
- Add the vegetable oil and let it heat up.
- Add the garlic and crushed red pepper flake.
- Cook, stirring occasionally, until golden (about 2 minutes).
- Add the spinach and toss.
- Add the rice wine vinegar and soy sauce.
- Stir and let cook until the spinach wilts, about 4 minutes.
- Sprinkle in the sesame seeds.
- Remove from the heat and add the sesame oil.
- Toss to combine.
