Turkey Burrito Burgers with Guacamole

This burger is super-sized for sure!  (Next time, I will make 6-8 smaller burgers instead of the 4 massive ones I made tonight.)  The flavor was totally there though.  And I love guacamole, so that was an added plus.  I also made some Betty Crocker cheesy potato thing as a side dish.  (Not a huge fan of anything boxed, but it has been in my pantry for about a year and I just wanted to get rid of it.  Glad it’s gone!)

The recipe is based on a Rachael Ray recipe.  I changed it a bit though.

Start by making your burgers…

  • Combine 1 package ground turkey with a big handful of chili powder, 1.5 teaspoons of both cumin and ground coriander, and a tablespoon of grill seasoning.  (Grill seasoning is a great thing because it has your normal s&p as well as other great spices.)

  • Add 1 cup leftover rice (I used the rice leftover from the chicken dish earlier this week) and 1 small can of pinto beans (drained and rinsed).

  • Combine everything and form into 4 equally-sized patties.  (Remember they are big patties thanks to the rice and beans…you may want to make smaller ones.)

I scored the meat into 4 equal parts.  Then I made 4 giant meatballs.

  • Cook your patties (flipping them once) on a grill pan or in a skillet with a little oil.  (I used my panini press/grill pan.)

While the burgers cook, make the guacamole…

  • Cut up 2 avocados.  (It’s easiest to half them, remove the seed, score them with a pairing knife, and then scoop out the pieces with a spoon.)

  • Season with salt and mash with a fork.  (I like a smooth guacamole…if you like it chunky, don’t mash up the avocados as much.)
  • Add 2 or 3 cloves of chopped garlic and 1 jalapeno (seeded and minced).
  • Stir and season with a little more salt.  (Taste as you go!)
  • Add a little lime zest and the juice from 1 lime.
  • Add a little red onion (finely chopped) and a little tomato (seeded and finely chopped).
  • Taste and season with a little more salt if needed.  I also added the juice from half a lime.

When the burgers are finished cooking, start assembling…

Spread the guacamole on one side of a roll.  (I used whole wheat.)  Add a slice of tomato to the other side.

Place the (giant) burger in between!

Here are a few notes if you are planning on trying this recipe…

  • I would not use the entire can of beans.  They made it harder to keep the patties together, and they also got dried up on the grill.
  • Like i said earlier, I would also make more smaller burgers.
  • Finally, I would use a stronger bun.  My whole wheat ones just didn’t cut it!

Serve with a Corona and lime!  Enjoy!
