Cheddar Stuffed Bacon Cheeseburgers

There’s this famous burger called the “Juicy Lucy”.  It’s basically a burger that is stuffed with cheese instead of topped with it.  It’s really a brilliant idea.  The satisfaction that comes from biting into a warm burger and having a burst of gooey cheese explode in your mouth is unreal.  I’ve made a few variations of a “Juicy Lucy” before (like my Stuffed French Onion Soup Burgers and my Cheddar Stuffed Jalapeño Burgers), and have always enjoyed them.  These burgers are just as good!

You can top your burgers anyway you’d like.  I went with *more* cheese, some buttery avocado, and some crisp red onion.  The burgers are really quick to make too (which means you can spend an extra hour at the pool the day you make them!).

Start by preheating your griddler/grill/grill pan to medium-high…

  • Cook 4 slices of bacon until crisp.  (I always cook mine in the microwave on one of these.)

  • Place one package of ground beef into a large bowl.

  • Add some Worcestershire sauce.

  • Sprinkle in some grill seasoning.

  • Mix the meat up.
  • Divide it into 4 equal-sized sections and make 4 patties.
  • Create a “well” in each patty.

  • Fill each well with some shredded Cheddar cheese.

  • Reshape the patties to cover the cheese.

  • Place on your griddler.

  • Cook for about 6 minutes on the first side.
  • Then flip.

  • Top each burger with some more cheddar.

  • Cook until done, about 5 more minutes.

  • While the burgers finish, wash and dry 4 large pieces of lettuce.  (You can use smaller pieces if you are using regular buns.  I skipped the bread again and just used the lettuce as a wrap.)

  • Slice up an avocado.

  • Slice up a little red onion.

To serve, start with a big piece of lettuce (or a bottom bun).  Place the burger on top.

Break a piece of bacon in half and place the pieces on top of the burger.

Add some red onion.

Add a few slices of avocado.

(If using a bun, add a piece of lettuce and then the top bun.)

Wrap the burger up in the lettuce and enjoy!

One Year Ago: Slow Cooker Pork with Sweet & Sour Red Cabbage

Cheddar Stuffed Bacon Cheeseburgers (serves 4)

INGREDIENTS:

  • 4 slices bacon
  • 1 pound ground beef
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon grill seasoning
  • 1 cup shredded cheddar cheese, divided
  • 4 large leaves of iceberg lettuce
  • 1 avocado, sliced
  • 1 red onion, sliced

DIRECTIONS:

  • Preheat your grill to medium-high.
  • Cook the bacon until crisp, either in your microwave or oven.
  • Break each slice in half.
  • Combine the beef, Worcestershire, and grill seasoning in a bowl.
  • Mix well, and form into 4 patties.
  • Create a “well” in each patty.
  • Fill the well with about ⅛ cup of the cheddar.
  • Reform the patties to enclose the cheese inside the beef.
  • Place the burgers on your grill.
  • Cook for about 6 minutes on one side, then flip.
  • Top each burger with the remaining cheddar cheese.
  • Cook until done, about 5 more minutes.
  • To serve, place each burger on a lettuce leaf.
  • Add two pieces of bacon.
  • Top with some red onion and avocado.
  • Wrap in the lettuce.

*Serve on buns instead of lettuce if desired.
