Winner! Winner! Chicken dinner!!
(Here is the first and second time I said it.)
This garlic hummus chicken was so delicious! It was moist and had great flavor. There was a freshness from the lemon, the vegetables were perfectly tender. The hummus formed a sort of crust on top of the chicken. It was really mouthwatering. I got my inspiration from this recipe.
Besides being delectable, this dinner was very easy to make. There was little prep work and everything cooked in one pot, making cleanup fast as well. It’s the perfect weeknight meal. I can’t wait to make it again with a different flavored hummus and different vegetables. I think I’ll try spinach and artichoke flavored hummus next time and use tomatoes and artichokes instead of zucchini and squash. The possibilities are endless!
Start by preheating your oven to 450°…
- Slice 1 red onion and cut 1 zucchini and 1 yellow squash into half moons.
- Place the veggies in a baking dish.
- Drizzle some EVOO on top.
- Season with some s&p.
- Toss to combine.
- Thinly slice 1 lemon.
- Place the lemon slices on top of the vegetables.
- Season 4 chicken breasts with s&p on one side.
- Place the chicken breasts, seasoned side down, on top of the lemons.
- Season the other side of the chicken breasts with some more s&p.
- Spread some garlic hummus on top of each breast.
- Sprinkle some paprika on top.
- Bake, until the chicken is cooked through, about 25 minutes.

Three Years Ago: Orange Chicken with Broccoli and Red Pepper
Hummus Crusted Chicken with Zucchini & Squash (serves 4)
INGREDIENTS:
- 1 zucchini, cut into half moons
- 1 yellow squash, cut into half moons
- 1 red onion, thinly sliced
- 2 tablespoons extra virgin olive oil
- salt
- ground black pepper
- 1 lemon, thinly sliced
- 4 chicken breasts
- ½ cup garlic hummus
- ½ teaspoon paprika
DIRECTIONS:
- Preheat your oven to 450°.
- Combine the zucchini, squash, and onion in a large baking dish.
- Add the olive oil.
- Season with salt and pepper, to taste, and toss to combine.
- Layer the lemon slices on top of the vegetables.
- Season both sides of the chicken with some salt and pepper.
- Place the chicken on top of the lemon slices.
- Spread the hummus over the chicken breasts.
- Sprinkle the paprika on top.
- Bake, until the chicken is cooked through, about 25 minutes.
