Nothing beats a slow cooked shredded meat. It’s so tender and juicy. I just love it. I’ve made lots of shredded chicken dishes in my slow cooker already, so I decided to give “the other white meat” a try this time (aka pork). I got the idea from this recipe. I decided to serve the pork in lettuce wraps instead of as tacos though (calorie counting!), and I just topped the meat with a little cheese.
The prep for this recipe literally took 5 minutes. Then, you’re free to go about your day while the pork cooks low and slow. And, once the slow cooker beeps to let you know it’s finished, you’ll have dinner on the table in just 5 more minutes. That’s the beauty of the slow cooker!
Start by making the sauce…
- Pour 2 small cans of tomato sauce into your slow cooker.
- Add 1 tablespoon of chili powder.
- Pour in 1 tablespoon of cumin.
- Add 1 tablespoon of brown sugar.
- Sprinkle in ½ teaspoon of cayenne pepper.
- Then, add ½ teaspoon of salt.
- Mince up several cloves of garlic.
- Add the garlic to the slow cooker.
- Whisk well.
- Add a pork tenderloin.
- Turn the tenderlin to coat in the sauce. Then, spoon some extra sauce over the pork.
- Cover and cook on low for 8 hours.
- After 8 hours, remove the pork from the slow cooker.
- Shred with two forks.
- Stir in the leftover sauce.
- Serve the pork in lettuce wraps, topped with the cheddar cheese.

Slow Cooker Shredded Pork Lettuce Wraps (serves 4)
INGREDIENTS:
- 1 small can tomato sauce
- 1 tablespoon chili powder

- Bibb lettuce

- Pour the tomato sauce into your slow cooker.
- Add the chili powder, cumin, brown sugar, cayenne, salt, and garlic.
- Whisk well.
- Add the pork tenderloin.
- Turn to coat in the sauce.
- Spoon some extra sauce over the pork.
- Cover and cook on low for 8 hours.
- Remove from the slow cooker.
- Shred with two forks.
- Stir in the leftover sauce.
- Serve the pork in lettuce wraps, topped with the cheddar cheese.
