Finally am back to a cooking routine and am very happy!
Tonight I made a recipe from Giada DeLaurentiis that I found on foodnetwork.com (http://www.foodnetwork.com/recipes/giada-de-laurentiis/whole-wheat-linguine-with-green-beans-ricotta-and-lemon-recipe/index.html). I was a little worried that the sauce wouldn’t be great since it was just ricotta and some cooking liquid from the pasta, but it came out good. I added a little more ricotta than it called for and also used grape tomatoes rather than cherry ones. To save time, I bought a bag of already trimmed and washed green beans. I was definitely satisfied after we ate. Best part is that it’s 4 total servings and each is only 4 Weight Watchers Points. I was shocked! (The only ingredients with points values were the ricotta and the olive oil. Apparently, 12 ounces of whole-wheat linguine is 0 points?!)
